Ingredients
For the Borscht
- 2 medium raw beets, peeled and roughly chopped
- 2 cups filtered water
- 1 large cucumber, diced
- 2 celery stalks, chopped
- 2 radishes, thinly sliced
- 2 green onions, sliced
- 1 small garlic clove
- 2 tablespoons fresh dill, finely chopped
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh lemon juice
- 1 tablespoon apple cider vinegar
- 1 teaspoon raw honey or maple syrup (optional, for balance)
- 1 teaspoon sea salt, or to taste
- ¼ teaspoon freshly ground black pepper
Optional Garnishes
- Diced avocado
- Extra fresh dill
- Microgreens or sprouts
- Thin cucumber ribbons
- Freshly cracked black pepper
- Cashew sour cream or coconut yogurt
- Hemp seeds
Directions
- Place the beets, filtered water, garlic, lemon juice, apple cider vinegar, maple syrup (if using), sea salt, and black pepper into a high-speed blender.
- Blend until completely smooth and silky.
- Pour the beet mixture into a large bowl.
- Stir in the cucumber, celery, radishes, green onions, dill, and parsley.
- Taste and adjust the seasoning, adding more lemon juice or salt if desired.
- Refrigerate for at least 30 minutes to allow the flavors to develop, although it can be enjoyed immediately.
- Ladle into bowls and garnish with avocado, extra dill, sprouts, and a generous dollop of cashew sour cream.
Chef’s Notes
- For an authentic Polish touch, use an abundance of fresh dill and parsley.
- For a Ukrainian-inspired version, add a handful of shredded cabbage and a pinch of freshly grated horseradish.
- If you prefer a smoother soup, reserve half of the diced vegetables and blend the remaining vegetables into the beet base.
- The flavor becomes even more vibrant after a few hours in the refrigerator.
