🌿 Ingredients

  • 3–4 nori sheets
  • 1 large cucumber, julienned
  • 1 medium carrot, julienned
  • 1 avocado, sliced
  • ½ red bell pepper, thinly sliced
  • ½ cup purple cabbage, finely shredded
  • 2 green onions, thinly sliced
  • 1–2 tablespoons sesame seeds

Optional fillings or sides:

  • Sprouts or microgreens
  • Mashed avocado or raw guacamole
  • Coconut aminos or tamari (for serving)
  • Pickled ginger (optional)

🥢 Directions

  1. Place a nori sheet shiny-side down on a bamboo sushi mat or clean surface.
  2. Arrange a thin layer of cucumber, carrot, avocado, bell pepper, cabbage, and green onion across the lower third of the nori.
  3. Sprinkle lightly with sesame seeds.
  4. Carefully roll the nori tightly away from you, tucking the vegetables in as you go.
  5. Once fully rolled, gently press to seal the edge.
  6. Using a sharp knife, slice the roll into 6–8 even pieces.
  7. Repeat with remaining nori sheets and fillings.
  8. Serve immediately with coconut aminos or your favorite raw dipping sauce.
