🌿 Ingredients
- 3–4 nori sheets
- 1 large cucumber, julienned
- 1 medium carrot, julienned
- 1 avocado, sliced
- ½ red bell pepper, thinly sliced
- ½ cup purple cabbage, finely shredded
- 2 green onions, thinly sliced
- 1–2 tablespoons sesame seeds
Optional fillings or sides:
- Sprouts or microgreens
- Mashed avocado or raw guacamole
- Coconut aminos or tamari (for serving)
- Pickled ginger (optional)
🥢 Directions
- Place a nori sheet shiny-side down on a bamboo sushi mat or clean surface.
- Arrange a thin layer of cucumber, carrot, avocado, bell pepper, cabbage, and green onion across the lower third of the nori.
- Sprinkle lightly with sesame seeds.
- Carefully roll the nori tightly away from you, tucking the vegetables in as you go.
- Once fully rolled, gently press to seal the edge.
- Using a sharp knife, slice the roll into 6–8 even pieces.
- Repeat with remaining nori sheets and fillings.
- Serve immediately with coconut aminos or your favorite raw dipping sauce.
